Our Gin
The Stills
Our 50L copper pot still “Ginger” is aptly named after Jack’s late grandfather, who was rather partial to a Gin and Tonic! Ginger is our original still which was commissioned ahead of our launch in November 2019 and remains in use at the distillery. It is capable of distilling small & bespoke batches from just 70 bottles.
Our 200L “iStill” is our latest addition to the distillery which brings an exciting modern approach to traditional distilling methods. Our iStill was commissioned in early 2023 and is capable of producing some truly exceptional liquids in small batches from 280 bottles.
The Process
Loading
Our stills are loaded with a blend of neutral grain spirit and Speyside water to make a 60% ABV wash. Botanicals packed in muslin cloth bags are submerged directly into the alcohol. This is done just before the stills are heated.
Botanicals
Inspired by the diverse flora and fauna of the Cairngorms National Park, we take great pride in sourcing and using the finest botanicals available. These are partnered with our high quality distillate to create the award-winning range of Cairngorm Gins.
Heating
The stills are heated slowly to ensure a smooth distillation takes place, gently infusing the wash with our botanical blend. Both of the stills are electrically heated from a 100% renewable energy source.
Distillation
During distillation, several litres at the start of the batch, referred to as the ‘heads’ are collected separately and discarded before our desired spirit cut begins. Then, we carefully select and collect the good stuff, referred to as the ‘hearts’.
bottling
After a period of resting in stainless steel tanks, the spirit is cut by gradually diluting to the desired ABV% for bottling with filtered water from the River Spey. Once this is carefully checked and sampled by us, it's lovingly bottled and labelled by hand.
distribution
Once bottled, our gin is packaged and stored under bond before being released and making its onward journey to you and our valued specialist retailers, restaurants and bars.
